THE LANES HOTEL
Duties & Responsibilities
1. Develop recipes and determine how to present the food
2. Plan menus and ensure uniform serving sizes and quality of meals
3. Inspect supplies, equipment, and work areas for cleanliness and functionality
4. Monitoring and controlling stock levels
5. Creating new dishes and menus
6. Evaluates the job performance of each culinary team member
7. Manages service aspects in all Culinary assigned areas and events
8. Order and maintain all stock and day-to-day operations within budgeted guidelines and to the highest
standard
9. Monitor sanitation practices and follow kitchen safety Standard Operations Procedure. Ensure adherence
to food sanitation and safety guidelines
10. Proficient in the use of hotel systems. Working knowledge of how the systems work hand-in-hand
11. Ensure that all service staff are in proper uniform and adhere to the Hotel’s appearance standards
12. Recruit, manage and train kitchen helper. Orienting and training of Culinary team members. Able to assist
all Culinary team members in the use of Training Program
13. Work closely with Food and Beverage and Front Office Department regarding reservations and/or special
events
14. Communicates with Event & Sales Executive on Food and Beverage menus for events (Meeting
Packages, Wedding Packages, etc)
15. Conduct daily briefing with team. Inform all team members of daily activities, group, VIP arrivals,
departures as well as special requests and repeat guests. Updates group information. Maintains, monitors,
and prepares group requirement
16. Prepare performance reports related to Food & Beverage Department ;- Daily Report, Inventory Report,
Requisition Form, Beverage Costing, Sales Report, etc. Accountable for monthly stock inventories and
quarterly utensils, equipment, pots and etc
17. Maintains a professional appearance with a positive attitude and is adaptable and flexible. Ensure high
level of customer service is maintained at all times. Anticipate guests’ needs, respond promptly and
acknowledge all guests, however busy and whatever time of day. Responsible for achieving and
exceeding the guest satisfaction score Working co-operatively within team environment.
18. Manage and monitor activities of all employees in the Culinary department making sure they adhere the
standards of excellence and to the guideline set in the employee handbook, hotel policies and procedures,
coaching, training and correcting where needed
19. Maintaining proper employee / employer relations and addressing any question in a timely and open
manner, including disciplinary actions, recognition and performance evaluations
20. Coordinate all Special Events - ensuring never to over book the hotel during these times and all reports
are handled in a timely fashion. Always keeping in mind the needs of our Extended Stay guests first.
Coordinate all related tasks to insure the Special Events run smoothly
21. Be aware and able to enforce all HSE procedures. Remain current in all updates with regards to new
procedures and training. Ensure staff is fully trained in emergency procedures. This position is a member
of the hotel’s emergency response team
22. Providing or performing other services or duties as required by Hotel Manager
