JOB DESCRIPTION:
The Production Manager of Satami Jerudong Processing Centre / Central Kitchen is responsible for managing the daily operations of the centralized kitchen and warehouse that supplies to multiple restaurant outlets under the Satami Group of Companies. This includes overseeing food production, stock control, logistics, purchasing, halal food safety compliance, maintenance, and efficient use of the QNE Inventory Management System. The role requires strong leadership in staff management and process optimization to ensure timely, safe, and cost-effective delivery of food and materials to all outlets.
ROLES & RESPONSIBILITIES:
1. Production & Kitchen Operations
Oversee daily production across:
• Hot Kitchen, Dry Kitchen, Bakery, Poultry Butchery.
• Plan and schedule production based on outlet demand forecasts.
• Ensure standard recipes, portion control, and product consistency.
• Monitor productivity, minimize wastage, and optimize manpower utilization.
2. Halal Compliance & Food Safety
• Ensure all food handling and preparation complies with Brunei Halal standards.
• Ensure cleanliness, sanitation, and pest control standards are met
• Coordinate with Halal & Audit department and conduct regular internal audits.
3. Quality Assurance & Control
• Implement quality control checks at every production stage.
• Ensure all products meet company and regulatory standards.
• Handle product testing, shelf-life monitoring, and traceability.
• Investigate and resolve quality issues or complaints from outlets.
4. Warehouse & Inventory Management
• Oversee warehouse operations including Raw materials, Packaging supplies, Finished goods.
• Ensure proper Dry storage, Chilled storage, Frozen storage.
• Maintain FIFO/FEFO inventory practices.
• Monitor stock levels, conduct stock counts, and reduce losses.
• Coordinate procurement requirements with purchasing team.
7. Equipment & Facility Maintenance
• Monitor kitchen and warehouse equipment to ensure proper functionality.
• Coordinate preventive and corrective maintenance schedules.
• Ensure cleanliness, safety, and compliance of all work areas.
8. Staff Management & Training
• Lead and supervise kitchen, warehouse, and logistics teams.
• Conduct staff scheduling and manpower planning.
• Train staff on: SOPs, Halal compliance, Food safety practices.
• Evaluate staff performance and implement improvements.
9. Reporting & Communication
• Prepare operational reports on production, inventory, deliveries, and issues.
• Liaise with restaurant managers, local and overseas suppliers, and HQ departments.
• Provide insights and recommendations for efficiency improvements.
10. SOP Development & Continuous Improvement
• Develop and maintain Standard Operating Procedures (SOPs).
• Improve workflow efficiency across departments.
• Implement automation or system improvements where applicable.
• Ensure compliance with local regulatory requirements.
